FROZEN BLUEBERRY YOGHURT STICKS
Makes 14 skewers

With just three ingredients, this delicious and healthy frozen treat couldn’t be easier to make. If you’re serving it to young children, use child-friendly skewers with blunt ends.

Ingredients

250 g fresh blueberries

375 g vanilla (or honey) Greek yoghurt (use a quality, minimally sweetened brand)

Desiccated coconut, to sprinkle (see Tip)

14 wooden skewers

Method

Thread the berries onto the skewers, place them on a baking tray or a plate lined with baking paper, and place in the freezer for 1 hour.

Place the yoghurt into a shallow bowl. Roll each skewer in the yoghurt until the berries are coated in yoghurt. Tap skewer on the edge of the bowl to drain off the excess. Return each skewer carefully to the baking tray/plate and freeze for a further 1-2 hours.

Repeat rolling the skewers in the remaining yoghurt and return them carefully to the baking tray/plate. Sprinkle over the desiccated coconut and freeze for a further 1-2 hours until the yoghurt has completely set.

 

Tips

Try to source organic desiccated coconut as it typically does not have any added preservatives.
